Yep, I'm the same. At higher RPM the hydraulics do not seem to go any quicker and it's not so smooth.I know I'm naturally tight but I always set the regs to what seems right. Can't be doing with hearing them revving their guts out all day
Surely you don't run the tractors at full throttle though, you run them to suit the PTO or load?I allways run my machine at full throttle and allwAys have done.i know how it behaves like this,right or wrong I don’t know.as for getting machine level,if on a housing estate or where plenty of buildings about I use bottom of grader lined up with mortar lines to get level.also have magnetic spirit level on floor of cab and another at 90 degrees on cab frame which helps too.

Old gear pump machines worked best at full throttle and certain functions were unbearably slow at lower revs Modern piston pumps and load sensing technology now means that modern machines can be worked at much lowe revs, although it takes some adjustment for old school operators.
