What are you looking to achieve, a deterrent? Alerting? Maybe some evidential value? Monitoring for staff/safety?

All of the above really, my oldman is semi retired and he would like to see what's going on in his absence. We have surprisingly little problems with breaking attempts. We're pretty good with staff honesty to with our current team of guys, a few years back it was a different story and you never know what the future will be. It's mostly insurance is the reason we are using as an excuse to put a dose of then inside and outside the buildings..
Is it worth having an expandable system or after a few years if you want a bigger system you just chuck the old one out and stick in a new one.

Same with dash cams, I’ve only one at the moment in the family wagon, but it’s getting that way that anything on the road needs one just to prove your own innocence!

As a bloke who has a bike im not a fan of the dashcam idea !

You tend to buy either separate devices with a cloud service, or a networked system (IP, don't install old school coax anymore - outdated). With the latter, you see 4, 8, 16, 32 and 64 channels. So figure out the number of cameras you need and buy accordingly. I mostly install either 8 or 16 channel units at work, depending on branch size.
