The only thing I was told on an e10 is if your running a breaker you need the demo kit as they had a few come back on warranty with hyd tanks that had melted.

Think the demo kit on the bobcat added an oil cooler and two way? Not sure if the standard was just single acting
Apparently when I bought the doosan these were standard on them although the bobcat got a nice button to change between blade and track width, which the doosan still had a crappy lever on the floor that gets stuck with mud and that mud also freezes

Supposedly bobcat wouldn't let doosan have the switch.
You can buy the kit to convert it tho.
Bobcat made the switch standard around 2015 as they had issues with the manual change over valve and big issues with the blade and track change over.

I've not got one of these Bobcats but Ill chip in with my opinion anyway...
You need to buy another machine that tilts the other way when you need to do right hand banks. Or if you insist on having it both ways on one machine then you will need DC2 control system fitting to it at great expense its the only way, my mate had one and had to do that.
Or if money isn't endless, I am sure it will mention in the manual (located in the tube behind the seat) how to change it to double acting. All the ones I've driven have been.

So I’ve been through the digger following pipes and can’t find anything that looks like a tap to me. This is a stab in the dark and might be a stupid question, there is one of these here, and one on the right hand side of that on the other side of the part it’s bolted to. This couldn’t be something to do with it?

I'm going to say that those are the solenoids for the dead man levers, one for each arm rest.

Have you traced the auxiliary return line, usually the larger of the two, and traced it back to the hydraulic tank?

what's ringed is a Pressure relief valve BTLs ... a broader field of view in that pic'd be more helpful Mark ... or a couple of shots from differing angles
will surely be only one solenoid valve controlled by two switches in series Aiden .... no need for the expense of two solenoids and valves

looks like a one piece two way valve (like a cetop3, but integral) .... do you mean there are solenoids 'under' the two we can see Mark ??

Just had a quick look in the manual, and it says "one way flow standard" "two way flow optional"

Have you done as i said yet? Ring bobcat they will tell you yes or no if the machine came fitted with 2 way. That way your not wasting time looking at bits under the machine.
