They are washer and o ring, type the o ring sits in a grove around the fitting, you Thread the fitting into the item and adjust the nut down onto the washer, this pushes the o ring down and out to seal, you can change the angle of the fitting, the groove is wide so it is possible to adjust angle.

yeh .. familiar with the adjustable concept - used a few on the VA-r build ... was looking at the square in the end of each elbow .. different position on each, so assumed they're plugged (to attach/insert a Stauf gauge port possibly?) ... not seen 'em like that before

Don’t worry about them, they are Tapet threaded plugs for removal when inserting test port fittings (1/8 bspt)

Cheap alternative to Staufs being already fitted, but thinking about if you going to fit them for testing! Then are you telling the customer that there is a possibility that some when in the future they may be used to fault find
