Wondering what the height would be of the grouser bar on new 700mm wide pads on a 14 tonner? Wondering how worn my current pads actually are.

Mine have at least 20mm left still at 5000hrs!

Then your grand.
Grousers don't tend to wear. hence you change the chain groups not the grousers.
