Pel-job EB25.4 operating temperature

Hi everyone. I have a Pel Job EB 25.4. It’s an old machine but should be capable of what I need. It blew a head gasket in the past. Head has been skimmed and rebuilt.
I installed a temp gauge in the top hose before the radiator. It all works fine but the temp gauge goes up to about 100 degrees Centigrade.
I’m worried that it’ll carry on going up and blow the head gasket again.
Does anyone know what temperature it should operate at?

88-92C would be the average - is the thermostat opening at all/fully - that location is also the hottest point in the water jacket

Thanks. I took the thermostat out and ran it without. I’m waiting for a replacement.

Depending how the circulation flows, you can end up with poor circulation and hot spots running without a thermostat.

It's safer to cut the center out of your old thermostat and run it as "a restrictor plate".

It’s what I do!
Without a thermostat it will boil at some point, and that’s why it gets to 100deg

I took the radiator out and took it to a re-core place in Huddersfield. He showed me inside of it. Needless to say I’m getting it re-cored. At least I have found a major issue that I can solve.
